Running a home bakery means a lot of trial and error before you figure out what actually works. Consider this me saving you some of that trouble. Everything here is something I use, reorder, or genuinely love in my kitchen.

TOOLS & EQUIPMENT

Stand Mixer This is the one I use in my own kitchen. A good stand mixer is non-negotiable when you’re making macarons at any real volume. It’s also perfect for whipping up a giant batch of buttercream in one go instead of making small batches one at a time. Your arms will thank you.

Baking Sheet My absolute favorite, and once you try it you’ll understand why. The design lets heat flow evenly underneath, which means no more flipping your pan halfway through. Even bake, every time.

Silicone Mat I’ve tried a lot of mats. This one is the only one that actually works for me consistently. Just a note: the set comes with more than one mat, but I only use the white one with the circle templates on it. That’s the one you want for macarons.

Containers I have three favorites depending on what I’m packing, and honestly you might end up using all three depending on your order sizes too. My top pick is the fishtub container: it holds up to 72 macarons and fits perfectly in my freezer. For custom character orders where the shapes are bigger than a standard macaron, I love the Systema because it’s deep, stackable, and holds up to 90. The Rubbermaid is my go-to when I have a smaller order: super sturdy and holds around 50 macarons without all that extra empty space.

Thermometer Your oven is lying to you. An oven thermometer tells you what’s actually happening in there, and for macarons, that accuracy matters a lot. This is a must-have.

Timer Super simple, super cheap, and it comes in a pack of two. I keep one in the kitchen and never have to worry about forgetting to set a timer on my phone mid-task. Worth every penny.

Scale If you’re making macarons, a scale is non-negotiable. Measuring by weight instead of volume is the only way to make sure your recipe turns out the same every single time. Macarons are finicky and even small inconsistencies can throw off your results. But honestly a scale is just a good habit in general whether you’re troubleshooting a batch or tracking exactly how much of each ingredient you’re using so you can price your orders accurately.

Projector One of my favorite tools for custom work. I use it to project designs directly onto my baked goods or for royal icing details. It makes precision work so much more manageable.

Projector Stand A little more table space needed, but worth it. Other stands I tried had a holder that was way too tight and kind of stressful to deal with. This one holds the projector securely without the wrestling match.

Airbrush This is what I use for all my custom airbrush work. Nothing fancy, but it does exactly what I need. If you’re starting out with airbrushing on baked goods, this is a solid place to begin.

Photo Backdrop I don’t have a dedicated photo area in my house, so these backdrops are a lifesaver. They store flat, which I love, and they come in different options so you can switch it up. One heads-up on the material: it’s not like it can’t handle a stray drop of water, but if it gets smudged or dirty it’s basically not wipeable. So I always make sure my food is on a plate or board to keep it protected.

Silk Screen (for Stencils) This is how I make my own stencils. Paired with HTV below, you can create custom designs that look really polished on your finished products.

HTV (for Stencils) Used together with the silk screen above to cut and transfer custom designs. If you’ve been buying pre-made stencils and want more creative control, this combo is the way to go.

Edible Markers These are great for fine detail work directly on baked goods. The lines stay thin and controlled, which is exactly what you want when you’re trying to be precise.

Cookie Cutters (3″) I use these mainly to hold stencils in place while I airbrush: the round ones keep everything perfectly centered. But obviously they’re great for actual cookies too if you want a consistent, clean shape.

Cooling Rack A baking basic, but a good one matters. These are what I use and they do their job well.

Silicone Spatulas These are the cutest spatulas and yes, the sprinkle design absolutely matters. I use them for macaronaging and general baking and they just make the whole process a little more fun. Your kitchen should match the energy of what comes out of it.

Pastry Bag Ties Super colorful, super cute, and honestly such a good deal for how many you get in a bag. You’ll have these for a very long time. The only downside? I lose them constantly and I’m convinced I’m not the only one.

Piping Bags (Small and Medium) These are my go-to for piping macarons. They’re on the thinner side but that’s actually what I like about them: they give you a really good grip while you’re piping which makes a difference when you’re doing a big batch. One thing to know: they’re a little too thin for buttercream unless your buttercream is very room temperature. For macarons though, they’re perfect.

Sultan Tip This is what I use for piping a buttercream ring around the edge of the macaron shell, which leaves the center open for adding other fillings like jam, curd, or whatever else you’re working with. If you’ve ever wanted to get fancy with your fillings, this tip makes it easy.

Small Stainless Steel Spoons These are perfect for measuring out luster dust for decorating. A little luster dust goes a really long way so you don’t need much, and having small dedicated measuring spoons makes it easy to be precise without accidentally overdoing it.

PACKAGING

Thermal Label Printer This is one of my favorite kitchen investments. Printing ingredient labels is so cheap with this thing, and it’s genuinely easy to use. If you’ve been handwriting labels or paying for expensive prints, you’re going to love this.

Small Label Maker I use this for two things: labeling my own storage, and printing the small “free cookie for the road” label I include with orders. Cute little detail that customers notice.

Paper Corner Rounder Such a small thing that makes a big difference. I use this on my flavor cards, care cards, and gift tags to give them that finished, elevated look. Definitely one of those tools you didn’t know you needed.

Thick Card Stock This is what I print my flavor cards, care cards, and gift tags on. The thick card stock makes everything feel intentional and professional rather than printed-at-home. Worth it for the presentation bump alone.

2″ Round Labels These are great for so many things. I use them for logos on boxes and regular bags, but also for printing brownie labels, cookie labels, or really anything that needs a clean, polished little sticker. Super versatile.

3″ Round Labels (for logos) These are what I use for my logo stickers on large custom order bags. Clean, professional, and makes a big impact on presentation.

Thermal Labels (4″x6″ and 4″x3″) The brand matters here. I’ve tried off-brand labels and they don’t always print cleanly with my thermal printer. These are the ones that consistently work for me.

Jumbo Ziplock Bags This is a packaging hack I genuinely love. After I box everything up, the orders go into these bags to stay airtight in the fridge. No scrambling right before a pickup: everything is ready to go.

Cupcake Liners I use these to hold macarons in place inside bakery boxes, which keeps them from sliding around during transport. Also great for actual cupcakes, obviously.

Cupcake Wrappers These are the pretty, princessy ones I use for cupcake orders. They add so much to the presentation and photograph beautifully.

Bags & Boxes Finding the right box for macarons is genuinely harder than it sounds, so I wanted to share everything that’s worked for me. Some of these I originally bought for specific custom orders, but they’ve become regulars in my packaging lineup. Whether you’re packaging one macaron as a gift or 36 for a wedding, there’s something here for every order size.

MARKET ESSENTIALS

Cooler Non-negotiable for outdoor markets. Keeps everything at the right temperature so your macarons arrive at their best, not sweating in the heat. This is my favorite and fits at least 4 fishtub containers and 1 Systema container and a small bag of samples.

Ice Packs These are genuinely impressive ice packs. They’re super thin, which means they fit flat against the sides of my cooler and between layers of containers without taking up precious space. And they stay cold all day: I’ve never had an issue at a full-day market.

Insulated Bags When the cooler is full, these are my overflow solution. I also use them for customer pickups at public spots when the drive is a little longer: keeps everything from softening before they even get home.

Acrylic Sign Holder These make such a difference in how the table looks overall. Clear, clean, professional: they let your signs stand on their own without fighting with the rest of your display.

Tablecloth I specifically went with this style over the stretchy kind because at some of my markets I need to keep the cooler under the table, and the stretchy ones can’t hide it. This one drapes all the way down and keeps everything looking neat.

Macaron Props These giant macaron props are SO cute and they serve a real purpose: customers can spot you from way across the market floor. Fair warning though, some people walk straight over just to try to buy the props themselves. They’re that convincing.

Shelves Empty table space is wasted space. These shelves let me elevate my signs, props, and products so everything looks intentional instead of flat. Makes a huge visual difference.

Cute Mini Display Stands I use these to showcase the macarons up close in a way that looks really beautiful. You can also angle them to keep curious little hands (and some adults) from accidentally crushing anything. Practical and pretty.

NICE TO HAVES

Giant Macarons Okay these are just really cute. They work as decorative pieces, but also as jewelry holders or trinket dishes. Honestly a great gift for the macaron lover in your life (or yourself, no judgment).

Sprinkle Spatulas Because your kitchen should be as fun as what comes out of it. These are adorable and I smile every time I use them.
